Apple Cherry Salad With Pecans

This nutrient-rich version of the Apple Waldorf Salad contains more apples (with the skin on for increased nutrients and fiber) and the latest superfood fruit: dried cherries. Dried tart cherries contain anthocyanins, which are powerful antioxidants. Scientific research indicates that they may provide anti-inflammatory properties, help control diabetes and reduce heart disease and cancer risk. A lighter, reduced-fat mayonnaise keeps the fat under control.

Makes about 12 cups (1 cup servings)

Ingredients
4 large Fuji, Gala or Honeycrisp apples, cored and cut into ½-inch cubes
2 tablespoons fresh lemon juice
1 teaspoon fresh lemon zest
1¼ cups dried tart cherries
1 cup thinly sliced celery
½ cup finely chopped red onion
½ cup light mayonnaise
1 cup coarsely chopped pecans

Directions
1.  Mix chopped apples with lemon juice and lemon zest in large bowl.

2.  Add cherries, celery and red onion; toss.

3.  Mix in light mayonnaise.

4. Refrigerate until ready to serve.

5.  Add chopped pecans right before serving; stir well.
